Black Chickpeas Hummus

Hummus is always a very good option to spread on bread or pita’s , dip the crispy nachos and substitute unhealthy and fattening Mayonnaise in many ways. I always keep a jar full of hummus in my refrigerator and use it as salad dressing too.  To get this yummy hummus you need to :

Arrange:

Black Chickpeas / Any sprouts – 1/3 Cup

Salt

Water – 1/2 Cup

Green Chili – 1 (Chopped)

Ginger – 1 Tsp (Grated)

Chili Flakes – 1/4 Tsp

Olive Oil – 1 Tbsp

Soak black chickpeas overnight and pressure cook till they get soft. If using sprouts add a pinch of salt and 3 Tsp water to the sprouts and cook in microwave for 2 minutes,

Add rest of the ingredients and blend to make a smooth HUMMUS !!

“Bloody Eggs”

I always find eggs the best option for breakfast. Recently I tried “Bloody Eggs” for the breakfast and it came out  so good that now I often make it. For this recipe you will need :

Eggs – 4

Tomatoes – 2 (Chopped)

Tomato Puree – 1 Cup

Onion – 1 small (Chopped)

Garlic Cloves – 2 (Chopped)

Green Chili – 1 (Chopped)

Sugar – 1 Tsp

Salt to taste

Pepper Powder – 1/4 Tsp

Tomato Ketchup – 1 Tbsp

Oregano – 1/8 tsp (Dried)

Olive Oil – 2 Tsp

Chili Flakes / Red Chili Powder – 1/4 Tsp

Spring Onion Greens – 1 Tbsp (Chopped)

Heat oil in a pan

Add chopped onion, garlic and green chili to the hot oil.

Once onions get transparent add chopped tomatoes to the pan

Cover and cook till the tomatoes get soft.

Add tomato puree, tomato ketchup, sugar, salt, pepper, chili and oregano.

Cook on medium flame, stirring occasionally for 5 minutes.

Break all the eggs one by one in the sauce, eggs should be apart from each other.

Cover and cook on low flame till the yolk is half done and runny

Garnish with spring onion greens and serve hot with a Bread of your choice, Enjoy !!

“Nutrition for Kids – Implement and Importance”

“India” the second most populous country in the world is ranked among top countries fighting with “Malnutrition in Kids”. Two critical reasons responsible for this issue are, “Lack of Knowledge in parents About Balance Diet for Kids”  and “Poverty”. One – third of India’s population lives below poverty line and most of the kids among them suffer from “Malnutrition” .
One day while sitting alone I was reading an article about growing “Malnutrition in Kids in India”, Stats show that 44% of kids below 5 yrs of age are underweight an suffering from Malnutrition. That day I asked myself, “What could be the best I can do from my side to educate parents about well balanced and nutritional diet for a child and to come over this challenge?”. To start this project I did a workshop “Nutrition for Kids- Implementation and Importance” at preschool “The Daffodils’ Juniors” a unit of Grand Columbus International School on Saturday 21st Sept’2013.

In the workshop, firstly I introduced the concept of “My Plate” and “Food Pyramid” to the parents to design daily balanced meal for their kid. Secondly,  had one on one discussion with parents to tell them the ways and means to cook and make a child eat the food which he is not eating, like green veggies. Thirdly, discussed about the present food habits of the kids and lastly suggested some instant recipes by combining “food a kid loves to eat” with the “food he doesn’t like to eat” to fulfil his daily nutritional needs. Along with this I also suggested the parents the best of vegetables, fruits, grains, dairy and protein rich food for kids, along with their daily quantities and benefits.  Very importantly I gave some quick tips to make one pot meal for the kids that will fulfil his daily need of most essential nutrients. At the end, parent who were worried before, left relaxed and with a smile, knowing how they can provide the best food for their kids.

Green Salad in Ginger Dressing

Quick salads are always a great option for healthy, nutritional and low-calorie evening snack. I prefer to eat salad before lunch as well as dinner. This salad is most cherished one in my family. I was planning to share this recipe with you from so long but got a chance today !!

To make this salad all you need is :

Arrange:

Cucumber – 1 – Peel, Deseed and cubed.

Tomato – 1 – Deseed and Cubed

Capsicum – Deseed and Cubed

Lettuce – 1 Cup

Yellow Bell Pepper – 1/2 Cup – Deseed and Cubed

Red Bell Pepper – 1/2 Cup – Deseed and Cubed

Carrot – 1 – Peel and Cubed

To make “Ginger Dressing”

Extra Virgin Olive Oil – 1 Tbsp

Salt

Pepper – 1/3 Tsp

Chili Flakes – 1/4 Tsp

Lemon juice – 2 Tsp

Vinegar – 1 Tsp

Ginger Juice – 1 Tsp

Mustard Sauce – 3/4 Tsp

Step 1In a bowl grate 1″ ginger piece and squeeze to extract ginger juice from the grated ginger. Discard the ginger.

Step 2 - To the ginger juice add all other ingredients to make the ginger dressing and mix well.

Step 3 – Fold the cubed vegetables in the dressing and again mix well. Serve and enjoy !!

Whole Wheat Coffee Muffins

Just came back from a vacation, missed the circuit all the time. I am back again rejuvenated and refreshed as ever. Here is a recipe which I tried yesterday, it came out great, hope you like it.

As the name suggests, this recipe includes delicious and very soft Muffins made with fibrous Whole Wheat Flour. These  Muffins are not so sweet and are perfect to eat for breakfast or supper and tastes best if served with Vanilla Ice Cream with a dash of Dark Chocolate Sauce. The added Orange Zest gives a twist to the marvelous taste of Coffee. To make these Muffins,

You will need :

Whole Wheat Flour – 1 Cup

Salt – A pinch

Baking Soda – 1/3 Tsp

Baking Powder – 1 Tsp

Instant Coffee Powder – 3 Tsp ( I used Nescafe )

Eggs – 2

Low Fat Milk – 1/2 Cup

Cream (Clotted Cream / Malai) – 1/2 Cup

Vanilla Essence – 1/2 Tsp

Powdered Sugar – 3/4 Cup

Orange Zest – 1 Tsp

Chocolate Chips – 1 Tbsp

Butter – For Greasing

Method:

Preheat oven at 180 C.

Take a bowl and add Whole Wheat Flour in it.

Add salt, Baking Soda and Baking Powder to the Flour and mix well with a whisk.

Add Instant Coffee Powder to the Flour and again give it a mix. Keep this mixture aside for later use.

In another bowl add Cream ( Malai ) and Eggs.

To this add Vanilla Essence and Low Fat Milk.

Add Powdered Sugar and mix everything with a Whisk.

To this add Flour and Coffee mixture and whisk for 2-3 minutes in same direction.

Note : If using Electric Mixer do not mix for more then 30 seconds as butter may separate from the cream due to over whisking.

Grease the muffin tray with melted butter and fill the batter covering almost 80% of the depth.

Grease the muffin tray with melted butter and fill the batter. Sprinkle Chocolate Chips of your choice on top and bake in preheated oven for 20 minutes or till the time toothpick inserted in the center comes out clean.
